Raw Almond Yogurt



I'm so thrilled to see my sons taking an interest in raw foods! Today, they decided to try their hands at making yogurt. Josiah made the one pictured above. Many thanks to grandma Linda for her recipe.

Agar Mixture

5 cups of almonds
12 tsp of agar flakes
2 cups of water

Add 12 tsp of agar flakes to 2 cups of water. Simmer for about 7 min. Pour into bowl and let congeal. The amount of ingredients will be enough for the 5 cups of almonds. If you are just doing 2 1/2 cups of almonds....do 1/2 of this amount. 5 cups soaked peeled almonds divided into (2) 2 1/2 cups.

Put 2 1/2 cups almonds into blender, then put through nut bag and squeeze.

ADD
3 1/2 cups of water
1 heaping T. coconut oil
2 tsp vanilla
Dash salt
4 T. agava

Blend about 1 minute, then add 1 cup of the congealed agar mixture and blend about 1 min.

Pour into jar (1 cup size) and refrigerate overnight.

You can do the same with the other 2 1/2 cups of almonds or just make almond milke with them with the above add items, but add 1 cup extra water making a total of 4 1/2 water.

We decided to add some of our favorite fruits to the recipe. Strawberries, blueberries, and bananas were blended into the yogurt mixture. Upon serving, we added raw almond whip cream topped with cashews.

This is so interesting. 5 c of almonds and 12 t of agar flakes. Where do you shop? do you buy in bulk?

Hi Joli!

A lot of times, my mother-in-law and I chip in together and order almonds, agave, coconut oil, Irish moss....the list goes on. I also order organic fruits and veggies through a local co-op. Going that route helps, because as a single parent mom, this lifestyle is not easy for me. It is amazing how junk food is easier to obtain, financially speaking. It really takes determination making this work.

Regarding the amount of ingredients....when we make our yogurt, we go ahead and prepare a large amount that our family can enjoy throughout the week.
